- 4 Duck Breasts
- Mint Sauce
Remove the Duck from the fridge about 30 min's before cooking.
Rub / pat the skin the loosen up the fat.
Score the skin with a sharp knife.
Season with salt & pepper.
Place skin side down in a cold non stick pan on a medium heat without oil for 6-8 minutes or until golden brown. Pour off the fat regularly. Then seal the other side for about 30 seconds.
Place them skin side up on a rack in a roasting tin in the middle of the oven. Rare - 10 minutes Medium - 15 minutes Well Done - 18 minutes
Mix some honey and quarter to half a teaspoon of mint sauce in a bowl roughly 4-5 minutes before the duck is finished.
Tip: If your fan oven is burning the skin drop your heat to 180°C and cover them with some tinfoil to finish them off. Baste and finish in the oven.
