Beef Hotpot

Definitely one of my favorite dishes. Packed with flavor and guaranteed to give you beef that is so tender it will melt in your mouth.
Ingredients
- 1/4 Cup plain flour
- 750g diced beef steak
- Olive oil
- 2 Garlic cloves, crushed
- 1 Parsnip peeled and diced
- 3 Carrots peeled and diced
- 3 Medium Sweet Potatoes peeled and diced
- 2 Medium Onions
- Beef Stock
Method
Step 1
Preheat oven to 160°C/140°C fan oven. Place flour and beef in a bowl. Toss the beef in the flour to coat. Remove beef from bowl, shaking off excess flour. Heat 1 tablespoon oil in a large pan over high heat. Add half the beef. Cook, stirring, for 3 to 4 minutes or until browned. Transfer to a plate. Repeat with 1 tablespoon oil and remaining beef.
Step 2
Heat two tablespoons of oil in pan over medium heat. Add garlic and onion. Cook, stirring, for 3 to 4 minutes or until onion is tender. Add beef to a casserole dish. Add parsnip, carrot, onion and sweet potato. Cover dish and cook in the oven at max temp for 30 mins. Reduce heat and bake for 2 hours or until meat is tender.
Step 3
Remove lid. Cook, uncovered for 30 minutes or until sauce has thickened. Serve.
