Salt and Chili Crispy Chicken

  • 4 - 5 Cloves of Garlic
  • 1- 2 Spring Onions
  • 1 Tsp Chili Flakes
  • 1 Tsp Coriander Seeds
  • 3 - 4 Chicken Breasts
  • The Wet Mix:
  • 1/2 cup Plain Flour
  • 1 Tsp Baking Powder
  • 1 Pinch of Salt
  • 1 Pinch of Black Pepper
  • 1 Cup Soda Water
  • The Dry Mix:
  • 1 Cup Corn Flour
  • 1 Tsp Baking Powder
  • 1/2 Tbsp Garlic Salt


Step 1

Chop the chili and spring onion. And add to a ramekin. Chop the Garlic, put it in a separate ramekin then add 1 Tsp of Coriander Seeds and 1 Tsp Chili Flakes

Step 2

Make the Dry Mix as above.

Step 3

Make the Wet Mix as above.
Make sure that it has a runny consistency as in the video. The idea is to coat it in the Wet Mix, roll it in the Dry Mix and then fry.

Step 4

After cooking the chicken set aside in a strainer to remove any excess oil.

Step 5

Add a little oil to a pan and add the two Ramekins from earlier.
Let it cook until the garlic is slightly turning too brown.
Then add your Chicken and roll it around in the oil and spices to soak up the flavor.

Step 6

Serve with Rice and Chips.
Optional: Drizzle with some sweet chili finish it off.
